BabyCorn belongs to the maize family and this cereal grain is harvested when they are small in size and immature. They are handpicked and since they mature quickly, one has to have clear understanding as to when to harvest it. It is usually pale yellow, blue, pink to off white in colour depending on the variety and is sold in the market in bunches. Since it has a bland taste, it is appealing all around the world and is used commonly in Asian cooking.

Ingredients:

All you need for this mouth watering and healthy Baby corn gravy.

Baby corn - 10 in number
Pearl onions - 7 to 10
Big onion - 1
Tomatoes - 2
Cumin seeds
Fennel seeds
Red chilly
Coriander seeds
Turmeric Powder
Salt to taste
Cornflour powder

Steps:

Wash and cut baby corn into pieces.















In a bowl add the chopped baby corn pieces and mix it well with little turmeric powder, salt and cornflour powder.










Steam the marinated baby corn in idly steamer for about 10 minutes.











Off the steamer and keep it aside for sometime. we can achieve the same thing by boiling baby corn in hot water with turmeric and salt added. But i prefer steaming as baby corn wont lose its health supplements than boiling.








Wash the pearl onions and tomatoes which  are to be used.













In a kadai, dry roast the ingredients - coriander seeds, fennel seeds and red chilly. Once roasted, allow it to cool down for sometime.










In the same kadai, add some oil and fry pearl onions and chopped tomatoes until tomatoes become mushy.










Once the fried items become cool, grind everything (roasted coriander seeds, fennel seeds, red chilly & fried pearl onions and tomatoes together with little water and make it into a paste.









In the same kadai, add some oil and add cumin seeds when hot. Then add the chopped big onion and fry until golden brown.










Then add the grinded paste and allow it to boil for some 5 mins. add some water when necessary.











Then add the steamed baby corn and allow it to boil for another 5-8mins.













Garnish it with cashews and butter. Serve hot and Enjoy!!! This creamy kadai baby corn recipe tastes awesome with Chapathi/ Naan. Try this and Enjoy..
